The California Table Culinary Series

Set within the Chef’s Garden at The Ranch at Laguna Beach, The California Table invites guests to experience a one-of-a-kind culinary collaboration between Executive Chef Kyle St. John and Executive Chef Il Hoon Kang of Post Ranch Inn’s Sierra Mar.

Surrounded by fresh herbs, seasonal produce, and the quiet beauty of the canyon, this open-air dinner unfolds as a reflection of California’s diverse landscapes. Each course draws inspiration from the Pacific Ocean and the region’s rich agricultural heritage, highlighting hyper-seasonal ingredients and a shared philosophy of thoughtful, land-driven cuisine.

With limited seating and just two nights available, this intimate gathering offers a rare opportunity to experience two distinct culinary perspectives in one setting, brought together by a shared respect for the land and the stories it tells.

An Afternoon in the Chef's Garden

Chef Hoon's Michelin-trained background and refined yet curious approach pairs seamlessly with Chef Kyle's connection to the Harvest Farm and commitment to simplicity and flavor. Together, they present a menu that is both grounded and expressive-an evening that celebrates not just what is on the plate, but where it comes from.

The Evening

Guests arrive at the Valet Area and are transported to the Chef's Garden via golf cart. The evening begins with a welcome reception from 6:00 to 6:30 PM, accompanied by live acoustic music.

Guests are then invited to sit for dinner at 6:30 PM, where courses are presented collaboratively throughout the evening by Chef Il Hoon Kang and Chef Kyle St. John in a relaxed, communal setting.

Meet the Chefs

Chef Kyle St. John
Executive Chef, Harvest at The Ranch at Laguna Beach

Known for his seasonal, ingredient-driven approach, Chef Kyle works closely with the resort's Harvest Farm to create menus that reflect the flavors and rhythm of the Laguna canyon. His cooking emphasizes simplicity, sustainability, and a deep respect for the land.

Chef Il Hoon Kang
Executive Chef, Sierra Mar at Post Ranch Inn

Chef Hoon's culinary approach is guided by both pragmatism and curiosity, presenting ingredients simply with thoughtful and often unexpected combinations. Prior to Post Ranch Inn, he held leadership roles at Michelin-starred Madera and worked at acclaimed restaurants including Commis, The Restaurant at Meadowood, and Calistoga Ranch. This collaboration continues in May at Post Ranch Inn, where Chef Kyle St. John will join Chef Reylon Agustin for the next chapter of The California Table.
