Harvest Fashion

Season’s greetings Ranchers! This is Brandon, The bartender from Ben’s Pantry. I was asked to feature one of my favorite drinks for the season and it’s the Harvest Fashion, which is currently featured on our winter season cocktail menu. The Harvest Fashion joins my love of apple cider with my favorite bourbon cocktail, the Old Fashioned. The Old Fashioned highlights the oaky, caramel and vanilla notes of bourbon through the use of aromatic bitters and orange oil.

Chef Woods Country Ham

My favorite gift every year is a prized country ham sent by my mother from Harper’s Country Hams in her home town in Western Kentucky. This is no ordinary ham. It is a true Country Ham!

What’s the difference? A southern favorite, these hams are dry-cured like prosciutto, rubbed with salt and seasonings, smoked, then aged anywhere from 4 months to 3 years. Salty and chewy, it’s uncooked, and mostly bone-in. This is a centuries old method of preservation that doesn’t even need to be refrigerated.

Top Turkey Tips

1. Buy a Great Bird
Quality ingredients are the cornerstone to all cooking and especially turkey. Fresh is always better than frozen. When meat freezes it ruptures the cell walls in all of the meat. This is what causes all the moisture to run out when it thaws. Think about leaving a soda can in the freezer. What happens? It swells, breaks the can and it goes everywhere. The same happens when you freeze meat or poultry, except instead of soda, all the good juices go out and you’re left with a dry bird.

Spiced Apple Cider

Finally, we are feeling a break from the heat and it has seemingly switched to autumn overnight.   Laguna is known for our fabulous weather, but as a resident its nice to have bit of a season change every once in awhile.  Though I dread the shopping and holiday prepping, I do fancy the food and drinks this time of year.  In fact its one of my favorite culinary seasons!   When we get those handful of chilly days a year here in Laguna, there's nothing like warm, holiday-inspired spiced apple cider. Add a little rum and it’s great for a chilly night too.

Port-Poached-Pears

Port-Poached-Pears. Try saying that three times fast. OK, it’s not that hard to say, but it’s even easier to make. The pear season is upon us and this is a really versatile recipe that can be used as part of a salad with toasted walnuts, as a side for a roasted pork dish, or even served slightly warm with ice cream as a dessert. Feel free to change up the port for any other wine you prefer, but if you use a very dry wine, make sure you bump up the sugar a bit.
