Spiced Apple Cider

Finally, we are feeling a break from the heat and it has seemingly switched to autumn overnight.   Laguna is known for our fabulous weather, but as a resident its nice to have bit of a season change every once in awhile.  Though I dread the shopping and holiday prepping, I do fancy the food and drinks this time of year.  In fact its one of my favorite culinary seasons!   When we get those handful of chilly days a year here in Laguna, there's nothing like warm, holiday-inspired spiced apple cider. Add a little rum and it’s great for a chilly night too.

Port-Poached-Pears

Port-Poached-Pears. Try saying that three times fast. OK, it’s not that hard to say, but it’s even easier to make. The pear season is upon us and this is a really versatile recipe that can be used as part of a salad with toasted walnuts, as a side for a roasted pork dish, or even served slightly warm with ice cream as a dessert. Feel free to change up the port for any other wine you prefer, but if you use a very dry wine, make sure you bump up the sugar a bit.

Cam's Strawberry Jam

With the end of summer upon us we normally start thinking about fall dishes. However with the current heat and humidity here in Laguna, that last thing on my mind is roasted turkey and pumpkin soup. And while we will miss the summer when it’s gone for the year, here is a way to take a little summer the into fall months. This simple recipe is for strawberry jam, but any berry you like will work just as well. It you are comfortable with canning it in your own it jars go for it. If not, it will freeze just fine too. Just make sure you thaw it early enough when you want to use it.
