Top Foodie Trends in Orange County

The Ranch at Laguna Beach’s flagship restaurant, Harvest, was designed to be timeless — providing our guests with local flavors, the finest ingredients and a taste of California culinary traditions.

One of those traditions, of course, is being on the cutting edge of food trends. So we asked Harvest Executive Chef Charles Imbelli what’s hot in Orange County and beyond in 2017, and how those trends are reflected on the Harvest menu.

“Hyper-local cuisine is a big trend right now,” Imbelli said, “and we’re partnering with the Ecology Center on our own Harvest Restaurant garden. It’s a source of incredibly local organic produce — right in our back yard — that will inform our daily specials.”

The benefits are about more than just vibrant, great-tasting food, however. “Our garden also allows us to limit our carbon footprint,” Imbelli said, “by reducing the amount of produce we have to bring in from elsewhere.”

Even ingredients not grown on site are sourced as locally as possible, such as heirloom broccoli from Weiser Family Farms.

This approach dovetails nicely with another 2017 trend — bright colors, lots of fresh raw vegetables and micro greens. “We’re seeing a lot of layered compositions with different textures and colors,” Imbelli said.

“This region has so much agricultural diversity, and such a rich history,” he added. “It’s really not all that difficult to find amazing ingredients to work with. The hardest part is preparing them with the skill and care they deserve.”

While food trends always come and go, one thing will never go out of style — the fresh, thoughtfully sourced cuisine that Harvest is known for serving year-round.
